All our wines are from the Languedoc region in southern France
. We started out making wines in 1997. Our objective is to cultivate
our vineyards with absolute respect for the environment so that
our wines may express as naturally as possible their origin. We
seek to preserve our local eco systems in as natural as state as
possible, researching ways of allowing our vines to establish natural
defences against their different predators. We feed our vines compost,
made on each of our farms according to the Biodynamic principles,
to ensure our soil is nurtured with live matter. The centuries
of grape cultivation in this area has inspired us to believe that
we can grow the fruit to make the great wines of today.
Chateau Maris is a 40 hectare property in the
Minervois La Liviniere appellation, the first village appellation
in the Languedoc acknowledged by INAO in 1998. On this property
we have some very good old vine Carignan & Grenache, the
rest being Syrah.

"La Liviniere is the first village in
the Languedoc to be allowed to put its name after the appellation
name, indicating that it has been closely analysed by the national
institute over many years and they have concluded that its particular
area definitely produces wines of distinct quality.
The Chateau Maris comes from the best parcels
of the property mixing the two most expressive varieties Grenache & Syrah.
Hand picked grapes from chemical free soil the wine is aged in
barrel for 12 months before being bottled without fining or filtration.
An intense ripe red fruit bouquet gives way
to an elegant spicy smooth taste with a hint of stewed fruits on
the finish. This wine can be drunk now or over the next 5 years
and is especially good with Roast Lamb rosemary & garlic."
